Quince Cheese


Wash the quinces thoroughly and cut into pieces. Put them in a saucepan and add a little water. Cook until soft. Strain.   

 Put a little water in a saucepan, add the pieces of quince and sugar in the same proportion.   Simmer at low heat stirring  with a wooden spoon until it becomes very thick Pour into moulds while warm. 

In the past people used to put it in small saucers. When it is cool serve on bay leaves. 

It can last throughout the winter.
