The Rifugio Maranza offers a taste of the most authentic Trentino traditions. The Rifugio belongs to the “Ecoristorazione Trentino” project, launched with the aim of reducing the environmental impact of restaurant businesses by prioritizing local ingredients and inviting customers to apply the same eco-friendly values. Any ingredients that don’t come from local farms and producers are fairly traded. To avoid waste, the restaurant makes it easy for diners to take home any leftovers.

150 g Casolet cheese (Slow Food Presidium)
1 dl milk
For the garnish
6/8 confit datterino tomatoes
2 dl creamed peas
1 tbsp Maso Bottes olive oil (Slow Food Presidium)
